The milk used as a raw material in its production is mostly sheep's milk. Sometimes cow's and goat's milk is mixed with sheep's milk. Milk is fermented raw and the fermentation temperature is determined manually. This temperature is estimated to be around 30 C. It is added to approximately 80 litres of Turkish grocery milk with 100 ml of traditionally prepared yeast and left to coagulate for 1-2 hours. When the coagulation process is completed, the clot is transferred to the cloth bag. During the transfer process, one layer of curd is added and another layer of specially prepared herbs is added.
