Boza, which is one of the symbol drinks in winter, has many benefits when consumed in a healthy way and to a large extent. The word Boza comes from the Persian word 'buze', which means millet. Boza, which was sold by street vendors during the winter season in the past, has an important place in the Ottoman Empire. Although very different from Turkish market beer today, boza is considered the oldest known type of beer. In 1074, in the Divan-u Lugat-i Turk of Kasgarli Mahmut, it was stated that boza was made from millet. It is known that people living in the Caucasus consumed boza in ancient times. Boza, which has spread to the Crimea, the Balkans, the Caucasus, Central Asia and Egypt, has also started to be consumed in Eastern Europe and the Balkans. In the 16th century, boza began to be sold in shops.

A rare gem

Boza is a 9000 year old drink but still niche even in Turkiye i.e. not known throughout the country, literally making it the best kept secret of all times!

There's so much history and memories around it that people have an emotional connection to it, it was referred to in the 17th century British dictionary Glossographia by Blount, Thomas, 1618-1679. It took only 4 centuries for boza to become available via Best Grocery! ;)

People have a love/hate relationship to it as with most fermented drinks, and the product is alive so texture and taste changes over time: Some people like it sweet so they prefer fresh, some like it sour let it sit at room temperature to accelerate fermentation. Some prefer more dilute so it is easier to drink and some like it thick and eat it like a desert, and it gets thicker in the fridge with further gelatinization of corn and rice over time! Most like it with cinnamon, some like it with roasted chickpeas on top so options are endless!

Anyhow, it's hard to give justice to the experience of boza with mere words, you really have to try it for yourself!
