How to Prepare

The best quality candied chestnuts are made with the chestnuts collected from Bursa. Firstly chestnuts are boiled, then dipped in syrup to produce that incredible flavour of candied chestnuts. It takes a time commitment of a few days to get to the delicious finish line, but active cooking time is less than 2 hours, in total.

Bursa Kestane Şekeri; kestane meyvesinin kabuklarının soyulması ve şurup içinde pişirilerek şekerlendirilmesi ile elde edilen bir üründür.

Bursa’da 1900’lü yılların başından itibaren meşhur Şekerciler Çarşısında kestane şekeri üretilmeye başlanmıştır.

O dönemde Ankara’dan Bursa’ya gelen heyetlerin dönüşte Atatürk’e kestane şekeri götürdükleri bilinmektedir. Kestane şekerinin üretim merkezi uzun yıllar Bursa olmuştur.

Bu sebeple Bursa Kestane Şekerinin coğrafi sınır ile ün bağı bulunur.

Bursa Kestane Şekerinde meyve oranı en az %63-71 ve şuruplu kestane şekerinde meyve oranı en az %60 olmalıdır. pH değeri ise 5-5,8 arasındadır.

Bursa Kestane Şekerinin yapımında kolay soyulabilen, ince kabuklu kestaneler kullanılır. Meyvede kabuk oranı % 25 ve altında olmalıdır. Kabuk renginin çok koyu olmaması tercih edilir.

Bursa Kestane Şekerinin rengi kehribar ve sarımsıdır. Çok koyu renkli ve karamelize olmamalıdır. Bursa Kestane Şekeri Türk Patent ve Marka Kurumu tarafından tescillenmiş ve coğrafi işaret almıştır.
